In the FINAL of the Bbc2 series, the 26-year old made a 3 course supper that reflected the story of his profession.
He beat Sven-Hanson Britt, 26 and Brian Mcleish, 32, in the last.
Jamie, who at present works at Rocca in St Andrews, said: "I need to cry a tad bit I'm so cheerful."
He included: "It's not settled in yet, I wasn't hoping to win.
"The blood, the sweat, the tears - its tricky to comprehend the amount of feeling goes into cooking and I trust I've demonstrated that."
Jamie, who exists in Arbroath with his wife Kelly, is the eighth victor of the show.
He was lauded by the judges on Tuesday's show for his energy for nourishment and adoration for cooking.
Judge Marcus Wareing said: "Jamie is a phenomenal cook that has an identity and a huge, enormous heart. That goes far in sustenance and this is reflected in his plates.
